A tasty & easy sheet pan dinner.
Busy schedule, meet sheet pan dinners. Chop some sausage and veggies, throw it on a sheet pan, throw that in the oven and dinner is on the table in no time. This particular sheet pan meal is super duper simple with minimal ingredients – it’s pretty much just sausage, sweet potato, and brussels sprouts. While that’s roasting in the oven, whip up a quick balsamic glaze to make this easy dinner a little more exciting.
NEED to know:
- Use your favorite smoked sausage- like beef smoked sausage, chicken sausage, etc. Just make sure it is fully cooked.
- Make sure you dice the sweet potatoes and brussels sprouts up in a way that everything is a similar size, to ensure even cooking.
- The balsamic glaze is not necessarily a “have-to”…but it’s really good so I definitely recommend making it! But if you do, a high quality balsamic is really a must! The cheapy grocery store balsamic is really not going to be nearly as good. You probably have a really cool local oil and vinegar shop that sells some really delicious and quality balsamic vinegars. That’s the recommendation for this glaze, and it’s a wonderful product to have in your kitchen in general!
- BUT, an easy alternative if you don’t want to make the balsamic glaze or don’t have a good quality balsamic is a premade balsamic glaze like this one.
GOOD to know:
- Cooking time can vary a bit depending on your oven, and depending one how crispy you’d like your dish to be. I like to roast this sheet pan dinner to get a nice crisp on the sausage and veggies, so if that’s not your thing, pull your sheet pan out of the oven as soon as the veggies are soft.
- This dish makes 6 generous serving sizes and reheats well, so it’s great for meal prep! Store in airtight containers (like these that are great for meal prep) for up to 7 days.
Sausage, Sweet Potato, Brussel Sprouts Sheet Pan Dinner
A quick and easy sheet pan dinner with sausage, roasted sweet potatoes and brussels sprouts, topped with a balsamic glaze.
Servings: 6
Ingredients
- 2 packages your favorite smoked sausage (two 13 oz packages, about 4 links)
- 1 pound brussels sprouts
- 2 medium sweet potatoes
- 4 tbsp olive oil
- salt and pepper to taste
- ¼ cup high quality balsamic vinegar
- 2 tbsp brown sugar
Instructions
- Preheat oven to 425℉.
- Slice sausage diagonally. Place on sheet pan.
- Peel sweet potato. Dice into bit size cubes, and place on sheet pan.
- Chop the brussels sprouts into halves or quarters, depending on size. Make sure the sweet potato and the brussels sprouts are roughly the same size. Place on sheet pan.
- Coat the veggies with 3 tablespoons of olive oil and salt and pepper. Mix to evenly coat. Drizzle remaining 1 tablespoon of olive oil over the sausage. Season lightly with salt and pepper (if desired) and mix evenly to coat.
- Mix all the contents of the sheet pan well to ensure everything is coated with olive oil and evenly distributed on the pan.
- Place sheet pan in the oven for 25-30 minutes, or until the veggies are tender and cooked to your liking.
- While the sheet pan is in the oven, prepare the balsamic glaze by adding the balsamic vinegar to a small saucepan over medium heat. Bring to a simmer, then add brown sugar. Let simmer for several minutes, until it thickens into a glaze.
- Once the sausage and veggies are done cooking, remove sheet pan from oven and immediately pour balsamic glaze (either homemade or store-bought) over the dish and mix well to coat.
Notes
Store leftovers in airtight containers for up to one week.
