Dessert for breakfast? Yes please. Well, these oats aren’t really dessert – they’re actually pretty balanced and very filling thanks to the addition of yogurt, chia seeds, and flax seeds. But still perfectly sweet thanks to the fresh lemon, homemade blueberry compote, and maple syrup. These overnight oats are my go to when I’m craving something sweet for breakfast, but still want to be fueled for the day!
NEED to know:
- Use frozen blueberries for the blueberry compote, rather than fresh. Better yet, use wild frozen blueberries – they typically have more flavor!
- If you are prepping several servings of oats to be eaten throughout the week, I recommend adding a few more tablespoons of milk/liquid to the servings that sit in the fridge for more than one night.
- The recipe calls for a vanilla protein shake. I love to use the Fairlife ones! Alternatively, you can use 1/2 scoop of your favorite vanilla protein powder and your milk of choice.
GOOD to know:
- The oats portion of the recipe is for one serving. The blueberry compote will make enough to top more than one serving of oats. I like to prep 2-3 servings of oats at a time and just use up all of the compote.
- These are the best jars for overnight oats! You can even fit a double serving in one jar (as pictured).
Lemon Blueberry Overnight Oats

Ingredients
For the blueberry compote
- 1½ cup frozen wild blueberries
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp maple syrup
For the oats
- ⅓ cup old fashioned oats
- 2 tbsp Greek yogurt (plain or vanilla)
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp chia seeds
- 1 tbsp ground flax seeds
- 1 tbsp maple syrup
- ⅓ cup vanilla protein shake, like Fairlife (or use ½ scoop of vanilla protein powder and ⅓ cup of milk)
Instructions
For the blueberry compote
- In a small saucepan, add the frozen blueberries, lemon juice, lemon zest, and maple syrup.
- Heat over medium heat until blueberries melt, then bring to a boil.
- Let the blueberries simmer for 8-10 minutes, or until the blueberries have broken down and the mixture has thickened.
- Set aside to cool.
For the oats
- Add lemon juice and lemon zest to the bottom of the jar.
- Then add the oats, chia seeds, and flax seeds.
- Add the Greek yogurt and maple syrup.
- Pour the protein shake (or milk) into the jar. Stir to combine, or put the lid on the jar and shake to combine.
- Let the oats sit in the fridge overnight, or for at least 4 hours.
- Once you are ready to eat or the oats have set up in the fridge, top with blueberry compote and more lemon zest. Enjoy!
Notes
If you are letting the oats sit in the fridge for longer than one night, add 2-3 more tablespoons of milk.
These overnight oats are best when eaten within 3 days of being prepared.
