Lemon Blueberry Overnight Oats
Lemon overnight oats topped with a blueberry compote

For the blueberry compote
- 1½ cup frozen wild blueberries
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 2 tbsp maple syrup
For the oats
- ⅓ cup old fashioned oats
- 2 tbsp Greek yogurt (plain or vanilla)
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tbsp chia seeds
- 1 tbsp ground flax seeds
- 1 tbsp maple syrup
- ⅓ cup vanilla protein shake, like Fairlife (or use ½ scoop of vanilla protein powder and ⅓ cup of milk)
For the blueberry compote
In a small saucepan, add the frozen blueberries, lemon juice, lemon zest, and maple syrup.
Heat over medium heat until blueberries melt, then bring to a boil.
Let the blueberries simmer for 8-10 minutes, or until the blueberries have broken down and the mixture has thickened.
Set aside to cool.
For the oats
Add lemon juice and lemon zest to the bottom of the jar.
Then add the oats, chia seeds, and flax seeds.
Add the Greek yogurt and maple syrup.
Pour the protein shake (or milk) into the jar. Stir to combine, or put the lid on the jar and shake to combine.
Let the oats sit in the fridge overnight, or for at least 4 hours.
Once you are ready to eat or the oats have set up in the fridge, top with blueberry compote and more lemon zest. Enjoy!
If you are letting the oats sit in the fridge for longer than one night, add 2-3 more tablespoons of milk.
These overnight oats are best when eaten within 3 days of being prepared.
